In 2015 Four Pillars combined their Rare Dry Gin with some of the best Shiraz grapes in Australia to create the Bloody Shiraz Gin for the first time. And now each year they steep Yarra Valley Shiraz grapes in gin, and after eight weeks they press the fruit before blending with more Rare Dry Gin.

A new and permanent member of the Four Pillars family, Fresh Yuzu Gin offers amazing aromatics that are a mix of lemon, mandarin, cumquat and grapefruit. The palate also features ginger, turmeric and sencha genmaicha, a Japanese green tea with roasted brown rice, for depth of flavour.

Similar in style to the Rare Dry Gin but with the addition of three fresh botanicals: turmeric to add weight and earthiness, ginger for spice and zesty native finger limes.

The botanicals include a big base of juniper with a savoury overlay of coriander seed, rosemary, olive leaf, olive oil, bay leaf, lemon myrtle, macadamia, orris root, and fresh lemon and grapefruit. Fresh ingredients were vapour infused while the others macerated in the pot. Four Pillars have used olive leaf and oil from the Picual, Hojiblanca and Coratina varieties. This gin is savoury, textural and bright. Perfect for any Martini - Gibson, dirty, or dry with a twist. For a longer drink try it in a Spanish-inspired Gin & tonic, with rosemary and lemon!

Four Pillars Rare Dry Gin is crafted to deliver the best of all worlds: a perfect, classic gin and also something that would fascinate and delight even the most hardened gin fanatic. It's spicy but with great citrus, a truly modern Australian gin. Four Pillars Rare Dry Gin captures the essence of contemporary Australia's heritage in Europe and Asia. We're using whole oranges which is unusual but Australian citrus is highly aromatic and supports the spicier botanicals like cardamom. The cinnamon and star anise add rich fruitcake tones, the Tasmanian pepperberry leaf provides warmth rather than heat, and the lemon myrtle is a beautiful alternative to lemon peel.

Spiced Negroni Gin is made specifically for the Negroni, to cut through Campari and vermouth. It is a highly aromatic, rich and spicy gin with great power and intensity. Four Pillars use spices like Tasmanian pepperberry leaf, cinnamon, West African spice Grains of Paradise and Indonesian cubeb to up the flavour. Plus they add fresh ginger to the botanical basket to help lift the spice, and they opened up the plates in the still to add weight and intensity.

Galliano Amaretto is a rich and especially well-balanced. The bitter almond flavour is obtained by mixing the pure essence of bitter almonds with essential oils of geranium, rose and orris. Besides the familiar marzipan and bitter almond flavour, it contains hints of roasted cacao beans and Madagascar vanilla. The subtle note of sweet and sour cherries comes from the flesh and stones of the fruit. The distillate is left to age for a few weeks to develop the sweet, caramel and bitter aromas, which results in the unique feature of Galliano Amaretto.

Galliano Sambuca Black is a deep 'Liquore alla Sambuca'. The delicate liqueur gets its colour from blending the original recipe with elderberries, turning the Sambuca liqueur a deep blue almost inky black shade. Quite unusual. The signature aniseed aroma and lingering essential oils, are accompanied by an intense and spicy berry finish. A delicate charmer.

Galliano Ristretto is not like any coffee liqueur, but is a unique espresso liqueur with a more concentrated palate. Containing two varieties of dark roasted coffee beans: 55% Arabica coffee beans from Colombia and Brazil and 45% Robusta coffee beans from India and Kenya. The Arabica coffee beans give a chocolaty creamy and delicate top note, while the Robusta contributes body and bitter coffee flavoured tones. Galliano Sambuca White contains a very rare Chinese star aniseed from South China and North Vietnam. Married with the beautiful flavours of Mediterranean aniseed, fennel and a touch of mint, one captures the distinctive aroma of Galliano Sambuca White. To complete the bouquet, a variety of botanical essential oils is added, leaving a subtle sensation on the palate.

Galliano Vanilla contains the heart of Galliano L'Autentico, including Mediterranean anise, cardamom lavender, peppermint, and cinnamon. However, some prefer the taste of a strong tone of vanilla. Therefore a fragrant vanilla distillate of the highest quality has been added to the Galliano base to create Galliano Vanilla. Galliano Vanilla has a round scent, a sweet vanilla flavour. This pronounced aroma in our vanilla liqueur offers versatility in cocktails while retaining Galliano's unmistakable character.
